Carrot Cake with Cream Cheese Icing Recipe

This soft, sweet carrot cake is full of flavour and perfect for breakfast, tea or a holiday dessert. Feel like it's missing something? Add 1 cup of raisins or chopped walnuts for added texture/crunch!

 

 

INGREDIENTS (icing)

Cream cheese                   
             1 pack (250g)

Butter

½ cup
Vanilla Extract                      
2 tsps
Icing Sugar                    
4 cups

 

INGREDIENTS (cake)

Sorghum flour       
              1 cup

Potato starch

1 ¾ cup
Chickpea flour                                
  ½ cup
Tapioca starch
¼ cup
Arrowroot starch
¼ cup
Cornstarch
¼ cup
Xanthan gum
1 tsp
Ground almonds
1 ¾ cup
Baking soda
4 tsps
Baking powder
2 tsps
Nutmeg
1 tsp
Cinnamon
3 tsps
Carrot (grated)
8 cups
Vanilla extract
2 tsps
Eggs
8
Salt
1 tsp
Vegetable oil
2 cups
Melted butter
2 cups
Brown sugar (packed)
4 cups

 

METHOD (cake)

• In a bowl, mix all of the dry ingredients together with a whisk

• In a separate bowl, combine all of the wet ingredients

• Add the dry ingredients to the liquid mixture, mix batter just until all ingredients are well combined

• Pour the batter into 2 well-greased 9" x 13" glass pans

• Bake at 325ºF for 20-30 minutes or until a toothpick inserted in the center of the loaf comes out clean

  • • Let cool completely on a wire rack

    METHOD (icing)

    • Beat together the softened cream cheese and softened butter

  • • Sift in the icing sugar to avoid lumps, add the cream cheese mixture and continue beating until well combined
  • • Add the vanilla and beat just long enough to incorporate
  • • Ice the cooled cakes with the finished icing, if you find the icing too soft you can allow it to cool in the fridge for 30 minutes prior to icing the cakes

    2 - 9" x 13" glass pans

     

    CHEF'S TIP

    For an added texture/crunch add 1 cup of raisins or chopped walnuts
