Chocolate Hazelnut Flourless Cake Recipe

With a sweet, creamy mousse layered over a rich, decadent chocolate hazelnut flourless cake, this recipe is sure to conquer any chocolate craving.




Dark chocolate                   
        1 ¼ cup

Hazelnut paste               

½ cup
1 cup
Eggs                 10
White sugar                   
¼ cup



Egg yolks
              2 cups


⅓  cup
4 tbsp
35% cream                       
6 cups
Milk chocolate         
4 cups
2 tbsp


METHOD (cake)

• Melt your chocolate, hazelnut paste and butter over a double boiler

• While your chocolate is melting, start whipping your whole eggs, when they are foaming start to add the sugar slowly (whip to ribbon stage)

• When at ribbon stage, fold in your chocolate mixture until all is well combined

• Pour into a 12 x 16.5 inch baking tray and bake at 325ºF for 15-20 minutes

METHOD (mousse)

• Whip the egg yolks until foamy

  • • Make a soft caramel with the water and sugar, add to the egg yolks (continue whipping while adding)
  • • Melt chocolate with 2 cups of cream and add to the yolk mixture
  • • Dissolve the gelatin according to the package instructions and add to the mixture
  • • Whip the rest of the cream (4 cups) to a medium soft and fold into the chocolate

    • Cut the cake to the shape of a spring form pan and cover the bottom

  • • Add mousse up to half of the pan, add another layer of cake
  • • Finish with more mousse and let sit in the freezer overnight, remove pan while frozen
