Holiday Pudding Recipe

Looking for a nice dessert to serve at your next get together? This holiday pudding is colourful, festive and full of flavour. It's sure to be a hit with all of your guests!

 

 

INGREDIENTS

Mixed dried fruit      
              3 cups

Prunes                     

⅓ cup
Crystallized ginger                   
3 tbsp
Melted butter                          
 ½ cup
Orange zest                 
1 orange
Gluten-free flour                 
1 cup
Gluten-free bread crumbs                 
½ cup
Pecans                 
½ cup
Brown sugar                 
¾ cup
Brandy                 
2 tbsp
Egg                
1
Milk                 
½ cup
Golden syrup (desired amount to coat cake)     
½ cup (approx)

 

METHOD 

• Grease a 1½ litre pudding bowl or 12 mini molds  

• Mix the dried fruits, prunes, ginger, melted butter, orange zest, flour, bread crumbs and pecans together

• In a separate bowl, mix the brown sugar, brandy, egg and milk until the brown sugar is dissolved 

• Add the wet mixture to the dry and mix until well combined    

  • • Put the mixture into the greased mold (or mini molds)     
  • • Place in a dip tray and pour water on it, cover the tray and bowl with foil paper      

  • • Bake at 350ºF for about 45 minutes; check the water so that it doesn't go dry
  • • Check after 45 minutes, insert a knife and ensure it comes out clean
  • • Serve warm with the golden syrup or any other sauce of your liking

    YIELD

    12 individual cakes or 1 x 1½ litre pudding bowl
