Red Velvet Whoopie Pies

These gluten-free chocolately whoopie pies are so delicious it doesn't have to be a special occasion to make them. We recently added them to our afternoon tea menu as well — come try one! Click here to watch recipe video.

 

 

INGREDIENTS

Butter                                                                    

1/2 cup
Sugar                                                 
3/4 cup
Eggs                                             
1
Cocoa powder                                           
 4 tbsp
Salt                                       
1 tsp
Baking powder                
4 tbsp
White rice flour                
1/3 cup
Potato starch                       
1/2 cup
Tapioca starch                    
1.5 tbsp
Xanthan gum                                
4 tbsp
Buttermilk                 
2/3 cup
Vanilla extract                   
1.5 tbsp
Red food colouring                                    
1 tsp
Favourite filling (whipped cream, butter cream, etc)                         
1 cup
Icing sugar                                   
Sprinkle

 

METHOD 

• In a mixer, using the paddle, cream the butter and sugar until soft       

• When fluffy, add the egg and keep mixing until well combined    

• In a separate bowl, mix all the dry ingredients

• Add the buttermilk and vanilla extract and mix until well combined

• Scoop onto a tray

• Bake at 350ºF for 12 to 15 minutes

• Let cool and fill with desired filling (we use buttercream)

• Sprinkle with icing sugar before serving
