Holiday Shortbread Recipe

Bring them home from our bakery or make them yourself, Ste. Anne's gluten-free shortbread cookies are a perfect, sweet holiday snack to serve alongside a nice cup of hot chocolate, tea or cider.

 

 

INGREDIENTS

Butter      
              2 cup

Icing sugar

1 ¾ cup
Eggs                               
  1
Egg yolk                             
  1
Vanilla
2 tsps
Potato starch
¼ cup
Rice flour
1 ¾ cup
Cornstarch
½ cup
Tapioca starch
½ cup
Sorghum flour
¼ cup
Arrowroot starch
½ cup
Salt
1 tsp
Xanthan gum
1 ½ tsps
Coloured sugar
1 cup

 

METHOD 

• In a mixer, cream the butter with the icing sugar until creamy and fluffy, add the egg yolk, egg and vanilla

• In a separate bowl, mix all of the flours, xanthan gum and salt

• Add the flour mix to the butter and mix until well incorporated

• Let the dough chill for a couple of hours

  • • Cut the dough into two portions and roll to make a long log
  • • Roll the dough in the coloured sugar and cut it into ¼ inch rounds

  • • Place the cut rounds over a parchment lined baking sheet
  • • Bake at 300ºF for 10-12 minutes

    YIELD

    2 - 3 dozen cookies
