Makes 8-10 individual cobblers (4-inch ramekins)

  • 6 large fresh yellow peaches, sliced
  • 50 grams sugar
For The Cobbler Topping
  • 1/2 cup salted butter, melted
  • 150 grams white sugar
  • 1 teaspoon vanilla
  • 125 grams cup for cup gluten-free flour blend
  • 1 teaspoon baking powder
  • pinch of salt
  • 5 grams cane or raw sugar (for the top to add a nice crunch and colour)
  • Step 1

Mix the sliced peaches and the sugar and set aside.

  • Step 2

Next, mix the butter, sugar, vanilla, flour, baking powder and salt until a cookie-like batter forms.

  • Step 3

Gently scoop and press the peaches into each ramekin and gently press down, filling the cup 95% of the way up.

  • Step 4

Spread the topping over each ramekin, then sprinkle with the raw/cane sugar.

  • Step 5

Bake for approximately 30 minutes in a preheated oven set to 350*. They should be bubbling and juicy when done with a nice golden brown topping.

  • Step 6

Let stand for 20-30 minutes before eating to allow the juices to thicken slightly.

  • Step 7

Can be eaten as is or topped with whipped cream or, even better, Ste. Anne’s Bakery Iced Coconut Cream!
