Overnight Meatballs
Spend less time in the kitchen and more time with your loved ones with this easy Overnight Meatball recipe! These delicious meatballs can be served as appetizers or added to your favourite pasta dish.
Yield 17 meatballs @3oz each
- roasted garlic puree - 2 tbsp
- 30% heavy cream - 125 ml
- bread crumbs - 100 g
- garlic powder - 1 tsp
- onion powder - 1 tsp
- oregano - 1 tsp
- paprika - 2 tsp
- parsley - 1.5 tsp
- rosemary - 1.5 tsp
- thyme - 1 tsp
- salt - 1 tbsp
- black pepper - 1 tsp
- local ground beef - 2 lbs
- local ground pork - 1 lb
- Step 1
Mince the onions.
- Step 2
Mix all ingredients excluding the beef and pork and let sit in the fridge overnight. (This hydrates the breadcrumbs so they can amalgamate better).

The following day add the pork and beef to stand mixer or large mixing bowl.

Add the overnight ingredients.
- Step 5
Mix on low for about 2 min then turn on high for about 30 seconds to give it a sticky, emulsified texture. Or mix thoroughly by hand until well combined

Portion into 3 oz (84g) balls.
- Step 7
Put portions on rack trays and bake for 15min at 425 degrees.
- Step 8
Serve with your favourite sauce as an appetizer or add to a pasta dish.
