Braised Beef Hash with Chipotle Hollandaise Sauce

The IngredientsFor The Beef
  • 2 tablespoons Olive Oil
  • 1 (3 - 3 1/2 pound) brisket or any other large cut
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion, finely chopped
  • 1 medium carrot, finely chopped
  • 2 celery ribs, finely chopped
  • 4 garlic cloves, thinly sliced
  • 4 (4 - 6 inch) sprigs fresh thyme
  • 2 (6 - 8 inch) sprigs fresh rosemary
  • 2 tablespoons tomato paste
  • 2 cups full-bodied red wine
  • 2 cups water
For The Homefries
  • 2 pc russets potatoes, diced
  • 2 tablespoons canola oil
  • 1 teaspoon kosher salt
  • ½ teaspoon thyme, dry
  • ½ teaspoon rosemary, dry
  • 2 tablespoons caramelized onions
For The Chipotle Hollandaise
  • ½ cup butter
  • 3 large egg yolks
  • 2 tablespoons hot water
  • 1 tablespoon plus 1 teaspoon fresh lemon juice
  • 1/8 teaspoon salt
  • 1 tablespoon sauce from a can chipotles in adobo, pureed
For The Hash
  • 1.5 vol. oz. peppers
  • 1.5 vol. oz. onions
  • 1.5 vol. oz. mushroom
  • 3 vol. oz. spinach
  • 2 vol. oz. peas
  • 2 vol. oz. peas
  • 2 vol. oz. corn
  • 4 vol. oz. beef (braised)
  • 5 vol. oz. spring mix
  • 4 vol. oz. home fries
  • 2 vol. oz. chipotle hollandaise
Beef
  • Step 1

    Preheat Rondeau or other suitable-sized vessel on medium-high heat.

  • Step 2

    Season the beef well with salt and pepper.

  • Step 3

    Sear the beef on each side in the rondeau until outside is caramelized.

  • Step 4

    Remove beef and quickly sauté the onion, carrot, celery and garlic.

  • Step 5

    Once softened, add tomato paste and herbs and stir.

  • Step 6

    Deglaze with red wine, ensuring to scrape the bottom of the pan thoroughly.

  • Step 7

    Return beef to pan and add water.

  • Step 8

    Cover and bake at 325F for four to six hours until meat is fork tender.

  • Step 9

    Cool beef in the cooking liquid.

Homefries
  • Step 1

    Toss diced potato with oil, seasoning and dry herbs.

  • Step 2

    Roast on a bake sheet at 350F for 20-30 minutes until potato is cooked through and is golden in colour.

  • Step 3

    Toss with caramelized onion and heat through.

Chipotle Hollandaise
  • Step 1

    Warm the butter until melted and keep hot.

  • Step 2

    Whisk egg yolks and lemon juice in a stainless bowl over a pan of simmering water until the yolks begin to cook and achieve ribbon stage.

  • Step 3

    While keeping the mixture warm but not hot, steadily pour a slow stream of melted butter into the yolks and whisk constantly to ensure the mixture is homogenous.

  • Step 4

    Add water by the drop if the mixture becomes too thick before all the butter is emulsified.

  • Step 5

    Add seasoning and puree chipotle to taste.

  • Step 6

    Served immediately

Hash
  • Step 1

    Slowly heat the braised beef in a little bit of its cooking liquid.

  • Step 2

    Heat sauté pan until smoking and add oil. While stirring constantly, add the mushrooms, then the onion and peppers to the pan.

  • Step 3

    Season with kosher salt and pepper.

  • Step 4

    Put mixed greens on serving bowl.

  • Step 5

    In the pan add the warm homefries, corn and spinach; toss and check seasoning.

  • Step 6

    At the last minute toss in baby spinach and stir.

  • Step 7

    Pour hash into the bowl, top with warm braised beef, top with poached egg and drizzle with hollandaise sauce.
