Curried Blueberry Mostarda

The Ingredients
  • 1lb blueberries
  • 1 shallot
  • 2 tbsp curry powder
  • 2 tbsp grainy mustard
  • 1 tbsp olive oil
  • 50ml water
  • Step 1

    Finely dice the shallot.

    On medium-low heat, sweat the shallot in the olive oil for about 5 minutes.

    Add the curry powder and stir to combine.

    Add the water and cook until the water evaporates and a nice paste is formed.

    Add the blueberries and mustard and cook on medium-low heat for about 20 minutes or until the mixture has thickened to a jam-like consistency.
