Cranberry and Rosemary Baked Brie

Sweet-tart cranberries, fresh rosemary and warm baked brie come together in this simple recipe that feels just right for winter gatherings or a cozy night in. Finished with crisp baguette slices, it’s an easy appetizer that looks impressive without much effort.
- 2 cups - frozen cranberries
- ½ cup - white sugar
- 2 tbsp - salt
- 1 tbsp - orange zest
- 2 - shallots
- ¼ bunch - rosemary
- 150g - brie
- ¼ bunch - rosemary
- 1 tsp - salt
- 1 - baguette
- olive oil
- Step 1
Small dice shallots.
- Step 2
Preheat pot with oil on medium-high heat.
- Step 3
Sauté shallots until they start to lightly caramelize.
- Step 4
Add in the rest of your ingredients and simmer for 10 minutes.

Lightly pulse with a hand blender to get a thick sauce but still leaving some chunks for texture.

Preheat oven to 350°F. Place brie in a non-stick pan or a dish that is oven-safe.
- Step 2
Chop up rosemary very fine and mix with salt.
- Step 3
Sprinkle on top of brie.
- Step 4
Bake brie for 10-15 mins or until it starts to melt out the sides.

While brie is in oven, slice and lightly bake your baguette with olive oil and salt.
