Peach Cobbler

Looking for a delicious summer dessert? Look no further! Our recipe for Peach Cobbler is the perfect solution. Made with fresh, ripe yellow peaches, this sweet treat is best enjoyed with a dollop of whipped cream or Ste. Anne’s Bakery’s Iced Coconut Cream. Give it a try and satisfy your sweet cravings!
Makes 8-10 individual cobblers (4-inch ramekins)
- 6 large fresh yellow peaches, sliced
 - 50 grams sugar
 
- 1/2 cup salted butter, melted
 - 150 grams white sugar
 - 1 teaspoon vanilla
 - 125 grams cup for cup gluten-free flour blend
 - 1 teaspoon baking powder
 - pinch of salt
 - 5 grams cane or raw sugar (for the top to add a nice crunch and colour)
 
- Step 1
Mix the sliced peaches and the sugar and set aside.
 - Step 2
Next, mix the butter, sugar, vanilla, flour, baking powder and salt until a cookie-like batter forms.
 - Step 3
Gently scoop and press the peaches into each ramekin and gently press down, filling the cup 95% of the way up.
 - Step 4
Spread the topping over each ramekin, then sprinkle with the raw/cane sugar.
 - Step 5
Bake for approximately 30 minutes in a preheated oven set to 350*. They should be bubbling and juicy when done with a nice golden brown topping.
 - Step 6
Let stand for 20-30 minutes before eating to allow the juices to thicken slightly.
