Pork Tenderloin with Onion Fennel Agro Dolce
Pork Brine
  • 2L water
  • 150 g salt
  • 100g sugar
  • 1 orange
  • 3 cloves of garlic
  • 5 grams fennel seed
  • 5 grams yellow mustard seed
  • Large sprig of thyme
  • Large sprig of rosemary
  • 1.5 l Ice
  • 2 each Pork Tenderloin
Onion and Fennel Agro Dolce
  • 1 medium onion
  • 1 medium fennel bulb
  • 5 g Salt
  • ½ cup Brown sugar
  • ¾ cup Apple Cider vinegar
  • ¼ balsamic vinegar
  • 2 tbls pine nuts
  • 2g fennel seed
  • 2g mustard seed
  • 1 tbls olive oil
Brine the Pork
  • Step 1

    Using a peeler, remove all of the zest from the orange and squeeze the juice and put aside for later

  • Step 2

    In a large pot, add salt, sugar, orange zest and juice, garlic, fennel seed, mustard seed, thyme, and rosemary and water

  • Step 3

    Bring to a light simmer and stir to dissolve the salt and sugar

  • Step 4

    Add ice to a large container, then pour over the brine, stirring until the ice melts to cool down the brine

  • Step 5

    Add pork tenderloin to the brine and let it sit overnight

  • Step 6

    One hour before cooking, remove from the brine and rinse off any herbs or spices that are stuck to the meat, pat dry and let sit at room temperature until ready to cook

Onion and Fennel Agro Dolce
  • Step 1

    Julienne onion and Fennel, and add to a sauce pot with olive oil and salt. Cook for 10-15 min over medium heat, or until nicely caramelized

  • Step 2

    Add in Fennel seed, mustard seed, and brown sugar, cook for 2 minutes to release the aroma of the seeds

  • Step 3

    Add in the vinegar, bring to a boil, then reduce to a simmer, reduce by ¼ and put aside for later

Method
  • Step 1

    Preheat your oven to 400 °F

  • Step 2

    In a pan over medium-high heat, sear your pork tenderloin on all sides

  • Step 3

    Transfer to a baking sheet lined with a rack and roast in the oven to an internal temperature of 145 °F, approximately 15 min. Once cooked, remove from the oven and let rest for 5 minutes before slicing

  • Step 4

    Slice the tenderloin and arrange on a platter, and top with warm agro-dolce

Serve with your favourite seasonal vegetables, and roast potatoes
