Pumpkin Blondies

With pumpkin spice season upon us, this will become your most craved recipe of the season!
- 1 & 1/3 cup all purpose flour
- 1 tsp ground cinnamon
- 1 & 1/8 teaspoon baking soda
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 1 egg
- 2 tsp vanilla extract
- 540 ml pumpkin puree
- 1 tbsp pumpkin spice
- 1 cup unsalted butter
- 3/4 tsp salt
Please note that extras like Walnuts or Chocolate Chips can be added to the top while baking for your own twist
- Step 1Preheat oven to 350 F. 
- Step 2Line bottom and sides of a 9 X 13 pan baking pan with parchment paper, leaving an overhang on all sides. 
- Step 3Grease with non-stick cooking spray. 
- Step 4In a medium bowl whisk together flour, pumpkin pie spice, cinnamon, baking soda and salt then set aside. 
- Step 5In a mixer bowl cream butter with white and brown sugar on high speed until smooth. 
- Step 6Beat in egg and vanilla. 
- Step 7Beat in pumpkin puree. If the mixture looks curdled, do not fret. Reduce the speed to low and mix in dry ingredients until just combined. 
- Step 8Spread batter evenly in prepared pan. 
- Step 9Bake until edges begin to pull away from sides of the pan and a toothpick inserted in center comes out with just a few moist crumbs (35-40 mins) 
- Step 10Cool completely in pan before removing to be served.
