Strawberry Buckle

A classic summer favourite, our Strawberry Buckle is soft, buttery and bursting with fresh strawberries, finished with a golden, crumbly topping that bakes into the perfect “buckle” as it rises. Best enjoyed warm, simple and just sweet enough to let the berries shine.
- 2 cups all purpose flour
- 1 cup white sugar
- 3 tsp baking powder
- 1 tsp salt
- 2 cups whole milk
- 1 tsp vanilla
- 8 tbsp melted butter
- 1 pint strawberries
- Step 1
Remove stems from strawberries and cut into pieces.
- Step 2
Place strawberries in a bowl, sprinkle with some of the sugar and set aside.
- Step 3
In a large mixing bowl, combine all dry ingredients.
- Step 4
Whisk in the wet ingredients until just combined – do not overmix.
- Step 5
Strain the strawberries and gently fold them into the batter.
- Step 6
Pour into a prepared pan and bake at 350°F for about 40 minutes, or until fully cooked through.
