Zucchini Bread & Smoothie

Moist, flavourful and easy to make—this classic zucchini bread is a comforting bake that’s perfect for late summer. With warm cinnamon and a hint of vanilla, it’s just the thing to enjoy with your morning coffee or afternoon tea.
- 4 cups - all-purpose flour
- 1 tsp - salt
- 1 tsp - baking soda
- 1 tsp - baking powder
- 1 tsp - cinnamon
- 3 - eggs
- 1 cup - olive oil
- 2 tsp - vanilla extract
- 2 cups - grated zucchini (about 2 medium zucchini)
- Optional: 1 cup - chopped walnuts
- Step 1
Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper.

In a large bowl, whisk together the flour, salt, baking soda, baking powder, and cinnamon.

In a separate bowl, beat the eggs, olive oil, and vanilla until combined.

Add the grated zucchini and walnuts to the wet mixture and stir gently.

Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix).

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

- 2 - medium zucchinis, peeled and chopped
- 1 tbsp - cocoa powder
- 1 tsp - vanilla extract
- ½ tsp - nutmeg
- 2 cups (½ liter) - almond milk
- Step 1
Peel and chop the zucchinis into small pieces.
- Step 2
Add zucchini, cocoa powder, vanilla, nutmeg, and almond milk to a blender.
- Step 3
Blend on high until smooth and creamy.
- Step 4
Pour into glasses and serve immediately. Optional: add ice or a touch of honey for sweetness.
