Vegan Burger

- chickpeas - 212.50 grams
- walnut (halves/pieces) - 51.50 grams
- roasted garlic (in oil) - 25 gram
- smoked paprika - 1 gram
- hoisin sauce - 1 tbsp
- tomato paste - 12 oz
- gluten-free panko crumbs - 7.5 grams
- Spanish onions - 12.5 grams
- potato starch - 1/8 cup
- black pepper - 1 gram
- kosher salt - 2.5 grams
- quinoa (cooked) - 1 cup
- agar agar - 1/2 pack
- Step 1
In a small sauce pot, combine ½ of a pack of agar agar and 12.5 ml of water.

Bring to a boil and whisk well to combine, avoiding any lumps.

Place rinsed chickpeas, walnuts, roasted garlic, paprika, hoisin sauce, tomato paste, salt and pepper in the food processor and pulse briefly.

Keep the mixture fairly chunky.

Remove and place ingredients in a large mixing bowl and combine with remaining ingredients as well as the agar agar.

Mix with your hands until combined.

Form 4 equal-sized pucks.

Cook over medium heat in a pan or on a BBQ until golden crispy edges appear on the outside and is firm on the inside.
